Vinification

__________________________

The Glera grapes of the Asolo hills come around towards the end of September. After a soft pressing, the must, by using the selected yeasts, is fermented at a controlled temperature. After fermentation, the wine is filtered and stored; then fermented again in the surge tank with the addition of liqueur de tirage (bottling liquor) at a temperature of 16° C. After obtaining the sparkling wine, it is chilled at - 4° C and left in contact with the yeasts to extract the fragrance at best. After ageing, the product is filtered isobarically in another sealed stainless-steel surge tank and bottled.
