The Glera grapes mature towards the end of September. After soft pressing, the must is fermented at a controlled temperature by using selected yeast. After fermentation, the wine is filtered and stored; then fermented again in the autoclave by adding liqueur de tirage at a temperature of 16°C. Once the sparkling wine is obtained, it is chilled at -4°C and left in contact with the yeast.
After ageing, the product is filtered via the isobaric process in another autoclave and bottled

Straw yellow colour with intensely fruity aroma reminiscent of acacia flowers, wisteria, wild apple and mountain honey. The perlage is fine and persistent.
It is an excellent accompaniment of crustaceans, light fish, mollusks and is also perfect as an aperitif
