The wine is made off the skins and
refermented with cultured yeasts
at 16°C. After refermentation, the
wine is cooled to -4°C and left on
the lees. After maturation, the wine
undergoes isobaric centrifugation
and filtration in a second pressure
tank, followed by bottling.
Alcohol: 11,5 % vol
Residual sugar: 15 g / L
Total acidity: 5,5 g / L
Fruity and delicate, subtly aromatic
Lively and tangy, with pleasing
acidity on the palate. Dry, delicate
PAIRINGS AND SERVING TEMPERATURE
Perfect aperitif, with all kinds of finger food, recommended
with light fish dishes. Excellent with shellfish.
Serve at 4°C – 6°C.
Best consumed when young, to savour all its freshness, showcased
by the excellent fine, lingering bead.
