Maceration during fermentation on the skins at controlled temperature. Ageing in steel followed by further refinement in 225-litre, first and second passage French oak barriques of various levels of toasting

PAIRINGS AND SERVING TEMPERATURE

Meat-based pasta and rice dishes: tartare, barbecued meat, game; excellent with skewered meat and polenta, cured meats and ripe cheeses. Serve at 16°C – 18°C
