Rosé Spumante Brut is made with
carefully selected, early harvest red
grapes
Winemaking
The grapes are harvested and
fermented separately. After soft
pressing, the white grapes are
immediately separated from the
skins, clarified and fermented at
a controlled temperature of 17°C
with the aid of cultured yeasts.
The red grapes are initially left to
macerate on the skins to extract
colour and primary aromas. The
two wines are then blended to
make the base cuvée and moved
to a pressure tank for the second
fermentation process. This is when
the wine acquires its sparkle, to
be followed by stabilization and
microfiltration before bottling.
